Ratatouille is a culinary specialty of nice, also found throughout provence. it is composed of pieces of cooked eggplant, onions, zucchini, peppers and tomatoes. our recipe brightens up the flavor at the end with a splash of red-wine vinegar. this colorful dish will definitely satisfy your appetite tonight!
ingredients:
4 tablespoons extra-virgin olive oil
1 small onion, thinly sliced
1 red bell pepper, thinly sliced
½ teaspoon salt, divided
1 large eggplant, thinly sliced
2 small zucchini, thinly sliced
3 medium tomatoes, thinly sliced
¼ teaspoon ground pepper
1 tablespoon red-wine vinegar
1 tablespoon chopped fresh marjoram
direction:
preheat oven to 425°f. heat 1 tablespoon oil in a large cast-iron skillet over medium heat. add onion, bell pepper and ¼ teaspoon salt. cook, stirring frequently, until the pepper is soft and the onion is beginning to brown, about 10 minutes. remove the pan from the heat. carefully layer eggplant, zucchini (and/or summer squash) and tomatoes in an alternating shingle pattern over the pepper and onion. (they will overlap quite a bit.) if you have extra vegetable slices, save them for another use. drizzle with 2 tablespoons oil and sprinkle with pepper and the remaining ¼ teaspoon salt.
place the pan in the oven and bake until the vegetables are tender, about 1 hour. drizzle vinegar and the remaining 1 tablespoon oil over the top and sprinkle with marjoram. let cool for about 5 minutes before serving. leftovers can be refrigerated for up to 4 days.

today i was thinking about what are the common excuses of not eating healthy. one of them, especially common among guys, is that healthy food is bland. i have two things to say about this:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. it’s all about habits and what’s coded in your brain by your habits. when eating healthily is the norm, your brain doesn’t remember the intense flavours of processed food. your palette adjusts and anything not natural tastes crazy extreme. try tasting a milkshake or a piece of cake after a few months of cutting out the cr*p and eating whole foods. i bet you’ll feel a sickening sweetness in your belly after one bite and you won’t even want to finish the milkshake/cake. this is when you know your body prefers the sweetness that’s found in nature so much more. this is applicable to salt and other flavours too.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. when people say healthy is boring and bland, do they compare steamed broccoli to something spiced and cooked in fats? in that case, how about comparing apples to apples and steaming your burger and then comparing it to steamed broccoli? i bet the broccoli would be a million times better! an unflavoured pizza is just plain flour with water. does that sound delicious?

how about adding spices, using healthy fats and making sauces to accompany your whole foods, just like you would for any other meal? give it a try and then tell me how bland healthy really is!
