cookie ingredients:
 ½ cup (2oz/60g) almond flour
 6 tbsp (2.8oz/80g erythritol
 1 egg
 5 tbsp (1oz/30g) cacoa powder
 2 tbsp (1 fl.oz/28ml) vegetable oil (i recommend avocado oil)
 1 tsp sugar-free vanilla extract
 ½ tsp (gluten-free) baking powder
 1 pinch of salt

vanilla cream ingredients:
 ⅓ cup (3oz/90g) soft butter
 3 tbsp (0.6oz/18g)powdered erythritol
 1 tsp sugar-free vanilla extract
 1 vanilla pod, scraped

mix the cacao powder, erythritol, vanilla extract, and vegetable oil in a large bowl.
add the egg and whisk until the ingredients have combined.

in a separate bowl, mix the almond flour and baking powder.
add a pinch of salt.

add the flour mixture to the liquid chocolate mixture and start to combine both with your hands.
knead until you get a slightly sticky but firm dough.
at this point, preheat your oven to 350°f/180°c.

place the dough between two sheets of parchment paper and roll it out until it's approx. 5mm or 0.2" thick. (it may be easier to split the dough into two or three parts to do this.)
if the dough is still too sticky and you can't roll it out properly don't worry, that's quite normal for this recipe.
the two sheets of parchment paper prevent the dough from sticking to the rolling pin, but you can also wrap the dough in plastic wrap and chill it in the fridge for at least 1-2 hours for easier rolling of the dough.

cut out the cookies using a 2" (5cm) circle

place the cookies on a baking tray lined with parchment paper and bake in the preheated oven for approx. 6-7 minutes.

take the cookies out of the oven and let them cool down.

while the cookies cool down, beat the soft butter together with the powdered sugar and vanilla extract + inside of vanilla pod until pale and fluffy.

place approx. 1 tbsp of the vanilla buttercream on one of the chocolate cookies and press another equally sized chocolate cookie on top.
(make sure the cookies are cold when you do this.) 10
chill the cookies in the fridge for at least 1 hour before enjoying these little treats!

ingredients
150g dark keto chocolate 70%
150 ml / ½ cup + 2 tbsp milk
60 ml / ¼ cup keto sticky sweetener
1-2 tsp instant coffee
180 ml / ¾ cup smooth hazelnut butter
150 g / 1 cup roasted hazelnuts
a few drops of hazelnut extract or vanilla extract (optional)

method
1. chop your chocolate roughly. place the broken-up chocolate in a glass bowl over a water bath and melt very slowly. once the chocolate has melted, remove it from the heat, but keep the bowl over the hot water.
2. as the chocolate is melting, place the milk in a small p*t and warm it up a little bit. dissolve the instant coffee in the warmed-up milk. i went for 2 tsp of instant coffee to get a hint of coffee in the truffles. if you don’t want to taste coffee, go for 1 tsp.
3. slowly add warm milk to the melted chocolate. if chocolate becomes grainy and hard, don’t worry, it happens sometimes but as we are essentially making a ganache here, that’s no problem. just keep on adding milk and whisking at the same time. at some point the chocolate will return to its glossy and runny state.
4. whisk in the sweetener and the hazelnut butter. if you happen to have hazelnut (or vanilla extract), add a few drops (you could use both).
5. let the mixture come to room temperature and place in the fridge overnight for it to harden.
6. before taking the mixture out of the fridge, put aside at least 20 hazelnuts and chop the rest quite finely.
7. scoop portions of the mixture. flatten each portion in the palm of your hand, place a hazelnut in the middle and then close the truffle mixture around the hazelnut. quickly roll between the palms of your hands (that’s one area where permanently cold hands help a lot ? ) and then coat the truffle in the chopped hazelnuts.
8. store in an air-tight container, in the fridge. these truffles should keep for 5-7 days.

🍕preheat oven to 325 degrees f
🍕on a silicone baking mat or parchment paper, space out small cheese "nests" with your favorite cheese. i use mozzarella or cheddar. (this may change your baking times so keep an eye on them!) make sure they're not too close together so you don't end up with a big blob of cheese. they do spread out as they melt.
🍕drop your favorite toppings on each bunch of cheese.
🍕bake for 7-10 minutes. edges will get brown and crispy.
🍕remove from oven and let them cool and firm up a bit. you can place them on a paper towel to absorb excess oil if you want. i personally don't mind the oil, my bf doesn't care for it.
🍕serve with your favorite dipping sauce. i use rao's marinara and ranch.

Creamy parmesan garlic mushroom chickenis ready in just 30 minutes and the parmesan garlic sauce will wow the entire family!  this will become a new favorite! .

ingredients
4 boneless, skinless chicken breasts, thinly sliced
2 tablespoons olive oil
salt pepper
8 ounces sliced mushrooms
creamy parmesan garlic sauce:
¼ cup butter
2 garlic cloves, minced
1 tablespoon almond flour
½ cup chicken broth
1 cup heavy cream or half and half
½ cup grated parmesan cheese
½ teaspoon garlic powder
¼ teaspoon pepper
½ teaspoon salt
1 cup spinach, chopped

instructions
in a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. remove chicken and set aside on a plate. add the sliced mushrooms and cook for a few minutes until tender. remove and set aside.
to make the sauce add the butter and melt. add garlic and cook until tender. whisk in the flour until it thickens. whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper and salt. add the spinach and let simmer until it starts to thicken and spinach wilts. add the chicken and ,mushrooms back to the sauce and serve over pasta is desired.
