Holla back for pumpkin season y'all! 🍁 despite still wanting the sunshine to stick around, i'm feeling pretty geeked out about it being time for the pumpkin madness to begin. for my first pumpkin debute of the season i debated between something sweet or savory and savory won. this pumpkin chili is my husband's favorite and seriously guys, a huge crowd pleaser! everyone i have made it for always makes a funny face when i say pumpkin chili, but i'm telling one once they get a bite...game over.👌
got to stay home from work today and take care of baby girl since we didn't have childcare for the day, and i am loving every second of it! i could get used to this. but reality check.... bills and adulting and yadda yadda.

🍁 pumpkin chili 🍁
2lbs organic ground beef, turkey or bison. ( i used 1/2 turkey, 1/2 beef )
3 large carrots roughly chopped
1/2 yellow onion, roughly chopped
1 jalapeno diced
2 bell peppers chopped
4 cloves of garlic, minced
2 medium parsnips
1 can dice green chillies
3 tbl tomato paste
1 cup pumpkin puree
1 tsp acv
1 tbl honey ( omit if you want it to be #paleoapproved or #whole30approved )
1 tbl cumin
1 tbl oregano
1 tbl garlic powder
1 tsp paprika
1 tsp cayenne
salt & pepper
method: 🍁 season meat with all the spices, saving any leftover spices to throw in the chili later 🍁 brown meat and break it up as much as possible 🍁 add garlic and all veggies 🍁 add acv and stir, scrapping the bottom of the pan to get all the brown bits 🍁 add tomato paste, green chillies, pumpkin puree, honey and extra spices 🍁 add broth and stir 🍁 cook for 30 mins in #instapot or 4hrs in #slowcooker ( if one stove cook on med low for about 1 1/2 hrs ) 🍁 when done, using a ladle drain any extra moisture off the top and discard 🍁 i always give it a few pulses with a hand blender at the end to break up the bigger chunks and make it a nice texture🍁 too with #avocado, #cilantro and favorite hot sauce. 🍁

Went to the grocery store today with my favorite redhead. i was picking up some more blueberries 💙 and 🍓 when he pointed at the cantaloupe and said he wanted that. well, sure! i like cantaloupe. 👍 picked one up and when we got back to the house, i cut it up, put some in a bowl, and handed him a fork. he snagged a chunk and popped it into his mouth and promptly shook his head and said, "oh no. i can't like that." 🤦🤷😂 fine. more for me!! 🙆🙌 #kidsarefunny

Shout out to my husband for basically going plant based with me a year ago!*🌱 🥩 we still eat some eggs and he still eats a bit of cheese, and he just drank a latte but.... most days 😂😉😘 here are our vegan lunch bowls today, the best sourdough spelt crackers (@kingarthurflour recipe), chickpeas, cabbage slaw, hummus (on the blog), and brown rice for him, and sunflower seeds. 🙌🏼 🌱.
we didn’t try to cut out meat this much but it just kind of happened as we tried to do the best with our budget, and health, and the planet! we realised we’re a lot better at plant based than we predicted. it’s actually not been too tough for jared - an adjustment but not difficult. one tip: it can be mentally helpful to calculate the protein and calories in a plant-based meal! a lot of people think you can’t get full; or they don’t even feel full, but it’s actually a mental block. once they know the protein or calories just that info can help!! try it!

✨#fajitas #healthydinner #dinnerrecipes 📋heat your cast iron skillet with 1 tbsp @primalkitchenfoods . add fajita veggies and cook 5 minutes. remove veggies and add chicken in cast iron pan. cook 2-3 minutes each side until fully done. if i’m eating it tonight, i love adding my veggies back in so the flavors can meld even more together. if not, i put the veggies and chicken in tupperware containers with either avocado slices or chips as an addition. swipe for the finished meal!
The dreamiest buddha bowl!
i roasted ‘les petites’ color carrots from trader joe’s, broccoli, cauliflower and sweet potato seasoned in s&p and drizzled in avocado oil @ 400 f for about 30-40 mins. *i left the sweet potatoes in longer than the rest of the veggies
all i did to make this bowl was use a portion of shredded chicken that i prepped in my instant p*t and threw tons of the veggies i roasted in a bowl and whipped up a spicy tahini sauce to drizzle on top. this sauce is everything you guys🔥
2-3 tbsp garlic tahini
1 tbsp sriracha
1/2-1 tbsp dijon mustard
a littttle maple syrup to taste
i keep this sauce refrigerated so i add water if it thickens up too much.

Clean & healthy “oh my...stir fry!” .
so often i’ve stayed away from meals that have a ton of ingredients or a lot of chopping because i just want food on the table quickly; especially when i’ve just gotten home from the gym and i’m starving. i’m always looking for hacks to help with this. for this meal, i only had to use a knife for the red bell pepper and mushrooms because i used a mandolin slicer. huge, huge time saver! to get ribbons you just slide the vegetables longways down the blade of the mandolin. .
here’s what’s in this dish: baby zucchini, red cabbage, carrots, red bell pepper, snow peas, red onion, shrimp, coconut oil, broth, cashews, salt and pepper. sauté veggies in one pan and the shrimp in another. i use a little home made chicken bone broth in addition to coconut oil for added nutrients. don’t forget salt and pepper. top with cashews. yep, it really is that simple!

i am forever changed by this meal — so incredibly tasty.
i bought all my ingredients from @traderjoes
cook the cauliflower crust alone first.
__ bake crust on 450 degrees for 10 mins, flip the crust & bake another 10 mins
__ broil crust for 5 mins (if you like it crispy like me 😋) - sauce: i used the green goddess (salad dressing) from tj’s, but it’s so thick it was just like basil pesto sauce!🙌🏽
__ add toppings. i used tomatoes, bell pepper, onion, squash, zucchini & spinach!
__ broil 5-8 more minutes to cook your toppings
simple, quick & delicious!

Cookie dough to go🏃🏻♀️🍪 it’s almost impossible not to taste test the dough when you’re making cookies, am i right?👀 it’s arguably the best part of the process! i was making a batch of vegan chocolate chip cookies the other day and it hit me💡 why not leave it as-is rather than baking it? 🕺🏻 needless to say...edible cookie dough is my latest obsession! i love having it on hand in the fridge to eat by the spoonful like ice cream🥄 or for topping other warm baked desserts🍫 and there’s no eggs, dairy, gluten, etc. so it’s the perfect treat for anyyybody💯
edible cookie dough:
-3/4 cup nut flour (i used leftover pumpkin seeds/brazil nut milk pulp that i turned into flour! almond flour works too)
-1/4 cup coconut flour
-3 tbs melted/cooled coconut oil
-1 tbs maple syrup
-2 tbs non-dairy milk
-1 tsp vanilla extract
-1/2 tsp cinnamon
-pinch of sea salt
-3 tbs chocolate chips
-optional: 1 scoop @vitalproteins collagen
mix all of the ingredients together, fold in the chocolate chips, & enjoy! store in the fridge or freezer.
