Using hummus as a secret ingredient for a creamy vegan lemon garlic pasta 🍝 🍋🍃

ingredients
2 tablespoons olive oil
1 medium onion, sliced
2 garlic cloves, sliced
1 cup spinach
1 cup plain hummus
1 pound spaghetti pasta
juice of 1 lemon + zest
¼ cup chopped fresh basil, plus more for serving
pinch of crushed red pepper
instructions
bring a large p*t of salted water to a boil over high heat. add the pasta and cook until al dente according to package directions. reserve 1 cup of pasta cooking water, then drain the pasta and return to the p*t to stay warm.
in a large skillet, heat the olive oil over medium heat. add the onions and cook for 5-7 minutes or until fragrant and they soften. add the garlic, and cook for 30 seconds, or until fragrant. add the spinach and cook for 1 minute, or until is slightly wilts.
add the hummus, about ½ cup of the pasta cooking water, the lemon juice and lemon zest, and stir until a creamy sauce forms. add more pasta water to thin the sauce a little at time, as desired.
transfer the cooked pasta to the skillet, add the basil and crushed red pepper.
serve immediately basil, if desired.

Omigosh. this came out so look good! i made vegetarian p*t pie with seitan, peas, carrots, mushrooms, celery, onions, mushroom bisque, marsala (boiled for a bit to get rid of the alcohol content but keep the flavor), fresh tarragon, olive oil, salt, pepper, and garlic powder. i cooked it all together in a pan first, then spooned it in and covered it with pie crust and egg wash. surrounded by granny smith apple slices. this little ramekin-sized serving was just right for a diet portion.

made a hodge-podge scramble consisting of roasted green beans & asparagus, roasted sweet & russet potatoes, baked chicken breast, egg whites, and @thrivemkt coconut aminos over a bed of arugula & a side of cucumbers. topped off with some @wholefoods garlic tahini dressing & @traderjoes ebtb seasoning (everything’s whole30 compliant 🙌🏼)

this is what i heard today from the super trainer when i got close to finishing leg day and wanted to just call it quits. my morning was just awful between home stuff and then corporate world, nothing was going the way i planned.

but them words did it for me!
these programs are like nothing else out there. they’re so effective, they save a ton of time, and they totally inspire you to push to your best.
