It’s been almost 2 years since i stepped foot in a group fitness class. i was a regular until my cancer diagnosis, and then.... then i was worried if i would be able to exercise with chemo side effects, i was avoiding public places and all germs, i needed a double mastectomy that would limit my motion, and i wasn’t comfortable working out without my wig.
.
but i’ve now fought through all those things, and i’m standing on the other side. so this week was my first week back to my gym membership and group fitness. exercise is a privilege, and i see that now. #exercise4survival

i made this yesterday and had requests for the recipe.. so here it is! it was inspired by @frozen_bananas_ and as you can see scooter loved it too ๐Ÿถ๐Ÿ˜‚.

๐Ÿ”น2 cups oat flour or flour of choice ๐Ÿ”น1/4 cup ground flax.
๐Ÿ”น1/4 cup of your favorite protein. i used @shakleehq plant based vanilla. ๐Ÿ”น1 tbsp cinnamon .
๐Ÿ”น1 tsp baking powder .
๐Ÿ”น1/4 tsp baking soda .
๐Ÿ”น1 tsp vanilla .
๐Ÿ”น2 eggs or just egg substitute .
๐Ÿ”น1 cup unsweetened applesauce .
๐Ÿ”น1 medium apple, diced .
๐Ÿ”น1/4 cup coconut nectar
๐Ÿ”น1/4 cup chopped walnuts .

๐Ÿฅฃin a mixing bowl combine the dry ingredients: flour, flax, protein, cinnamon, baking powder/soda. .

๐Ÿฅฃin a separate bowl mix the remaining ingredients: eggs, vanilla, applesauce, apples, coconut nectar.
add the wet ingredients to the dry ingredients. add chopped walnuts. .

๐Ÿžpour into a greased 9x5 loaf pan or muffin tins and bake at 350 degrees for 28-32 minutes. .
